About Cabalen



Cabalen offers uniquely Filipino cuisine from the region of Pampanga as well as other regions in the cluster of islands in the Philippines. We offer the usual Filipino cuisine, most favored by folks regardless of their ethnicity or race, especially the Chicken and Pork Adobo, Lumpia and our mouth-watering Pork or Chicken BBQ.


Consistency

Cabalen is well known for its consistently high quality and great tasting food prepared and cooked with the finest ingredients and cooking methods used by generations before them - which they proudly claim as truly Kapampangan (regional) that is, WITHOUT SHORTCUTS.


Specialties

Specialties Original Kapampangan Sisig (grilled pork cheeks, ears, snout with chicken liver seasoned with calamansi salt and pepper, garnished with onions and jalapeno peppers) Available also using grilled pork or lechon kawali.

Fried or grilled Tilapia, catfish dipped in burong kapampangan. Dungenness crab cooked in coconut milk with beans and kabocha squash, Adobo Catfish cooked with vinegar and tumeric ginger Ginataang Kohol Crispy Binagoongan (Lechon kawali eggplant mango tomatoes. Inihaw na liempo with atchara Grilled Barbeque Pork Ribs. Kakanin-- Bibingka with latik, Ube Halaya, Cassava Flan,Espasol, Pitch pitchi cassava,Bibingka cake with parmesan cheese topping,Biko, Maha Blanca, (Tibok tibok)Puto, Kutchinta, Palitaw. Whole lechon 60 to 90 lbs.


Founded

Cabalen was established in 2008 by food purveyors Martin and Glecy Yabut both of whom were former cooks of two other Filipino restaurants in Hercules for over 8 years. An opportunity came up when management change took place at the last restaurant prompting the family open their own restaurant with their daughter Carmela Delos Santos and her husband Alenbert Delos Santos. Martin Yabut, an experienced chef is the man behind the flavors of Cabalen whose lineage is from a family of caterers and owners of Cabalen at SM (ShoeMart) Trinoma in Quezon City Philippnes.

Glecy Yabut is the logistic person of Cabalen who firmly believes that the success of anybusiness is closely tied in with your relationship with EVERYONE: CUSTOMERS., EMPLOYEES and SUPPLIERS. She is in the registry of the National Registry of Food Safety Manager and has earned the title of a Certified Food Safety Manager. Glecy strongly believes that good food & sanitation and cleanliness go hand in hand.

Cabalen offers daily lunch, dinners and weekend breakfasts.
